We use the luxurious ''Juniwari Koji Miso'', a type of ''Kaga miso'' that has been passed down since the days of the Kaga lord, Toshiie Maeda.
We blend long-aged, naturally brewed miso with carefully selected "secret dashi" for further evolution.
The soup has an elegant aroma, strong richness, and rich taste, and the aged noodles made with domestic wheat and potatoes go well together.
