THE chicken stock uses Yamagata Sakuranbo chicken, a local brand chicken from Shinjo City, and extracts the umami-flavor from every part of the chicken. The noodles are plump and chewy, thick and curly much-hydrated noodles.
After ordering, we simmer the chicken thighs in a hand pot to further extract the flavor of the chicken, and then carefully prepare each serving.
