We use several types of shrimp, including Shakotan shrimp, which have a strong flavor, and use soybean miso, which is common in the Tokai region, to create a rich miso soup.
Furthermore, we use miso tamari; extract with concentrated flavor, for the chashu prepared exclusively for Tokyo Ramen Festa 2023.
By stir-frying it on the spot, we bring out its aroma, richness, and flavor to its fullest.
