This year, it has been certified as a local ramen!
The ramen uses the luxurious "12% koji miso" from the "Kaga miso" that has been handed down since the time of Lord Maeda Toshiie, the lord of the Kaga domain.
The miso is aged for a long time and fermented naturally, and a carefully selected "secret dashi stock" is blended with it to further evolve. The soup has an elegant aroma, a strong richness, and a rich flavor, and the aged noodles made from domestic wheat with "potatoes" are mixed well.
The domestic pork belly is roasted over a flame to bring out the maximum flavor, and the "Carefully selected rich soy sauce" sauce, which is fragrant with a hint of brown sugar, will whet your appetite and make you stop eating!
