This year, we use only Daisen chicken to create a gem of a soup that combines the strong, clear soup stock of homebred chicken raised in mineral-rich underground natural water with the aromatic flavor, and umami of sardines from Ibuki in the Setouchi Inland Sea.
From last year, we would like to offer a delicate bowl that only an Italian chef can offer, with an even greater focus on subtracting flavors, simply pursuing umami, and paying close attention to the balance between noodles and soup.
