This rich, gritty, and meaty chicken broth is made with two types of chicken: the Amakusa Daio from Kumamoto, and the Awa Odori from Tokushima, both of Japan's largest and most mystical chicken breeds. We pair this soup with fragrant noodles made with "Haruyokoi" wheat.
The bowl is topped with three luxurious types of pork: pork shoulder, pork belly, and smoked chicken thigh.
